Apricot-Walnut Oat Cookies


  • Makes 16

    100g rolled oats
  • 130g Unflavoured & Unsweetened Huel Powder
  • 35g desiccated coconut
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 100g vegan butter
  • 80g light brown sugar
  • 100g granulated sugar
  • 1 tsp vanilla extract
  • 100g walnuts (coarsely chopped)
  • 150g dried apricots (coarsely chopped)


  • Preheat oven to 180C and line 2 baking sheets with baking parchment.
  • In a mixing bowl, combine oats, Huel Powder, coconut, baking powder, baking soda, salt, apricots and walnuts.
  • In a separate bowl, cream the vegan butter, vanilla, brown sugar and granulated sugar until smooth.
  • Add the dry ingredients into the wet ingredients and stir until combined.
  • With damp hands, roll small handfuls of dough into balls and place them on a lined baking sheet 2 inches apart.
  • Bake the cookies for 11-13 mins or until they start to be slightly golden around the edges.
  • Allow the cookies to cool for a few mins before transferring them onto a wire rack to cool completely. They are quite soft when they come out of the oven so this is an important step!
