Pea & Mint Soup


  • 1 tbsp olive oil
  • 1 tbsp fresh mint (chopped)
  • Half an onion (diced)
  • 1 garlic clove (diced)
  • 300g frozen peas
  • 1 vegetable stock
  • 500ml freshly boiled water
  • 3 scoops Unflavoured & Unsweetened Huel


  • Finely chop the onion, mint and garlic.
  • Heat the olive oil over low heat in a saucepan and add the onion, mint and garlic.
  • Let it cook softly for about 2-3 minutes, until the onion turn translucent.
  • Add peas and stock, stir and let it simmer for 20 minutes.
  • Blend soup until it’s creamy and smooth. Add 3 scoops of Unflavoured and Unsweetened Huel and blend again, adding a little more freshly boiled water if soup is too thick.
  • Season with salt and pepper.
